A healthy pizza alternative

Vegetarian pizza is a type of pizza that does not include meat. Vegan pizza is made without any animal product, including cheese or butter. Vegetarian pizzas are perfect for those on meatless or vegan diets and for those who would want to eat a delicious treat such as pizza minus all the calories and fats commonly found in animal products.

Vegetarian pizza is also referred to as veggie pizza. Typically it makes use of ingredients such as tomatoes, onions, bell peppers, mushrooms, broccoli, celery, cauliflower and carrots, and many others. Vegetarian pizza is a very healthy dish as the vegetables provide vitamins and fiber.

Among the most popular recipes for veggie pizza is the Roasted Veggie Pesto Pizza. The pesto gives this recipe a strong flavor, complimented by the sweetness of roasted vegetables.

Ingredients for Roasted Veggie Pesto Pizza include 1 whole wheat pizza crust, about ¾ block of firm tofu, 1 cup of spinach leaves, about ½ cup of basil leaves, ½ cup of olive oil, ½ of a large eggplant, 1 onion, 1 red pepper, 1 small jar of marinated artichoke hearts, 5 chopped mushrooms, 2 tablespoons of brown sugar, 4 cloves of garlic, 2 tablespoons of tomato paste and some salt and pepper.

Start by placing the eggplant, red pepper, onion and garlic in a small bowl. Toss it along with the olive oil, sugar and add a pinch of salt. Place it in an oven and bake it at around 375 degree F for about 25 minutes.

While waiting for the other ingredients to bake, puree the tofu in a food processor and blend in the spinach, basil, olive oil, tomato paste and flavor it with some salt and pepper. Make sure that all the ingredients are blended thoroughly as this will serve as the pizza sauce.

Spread the tofu mixture on the crust and then top it with the roasted vegetables, mushrooms, and artichoke hearts.

Bake your veggie pizza at 350 degrees F or wait until the crust is crispy on the bottom.
